Description

Chicken cordon bleu casserole is a delightful blend of tender chicken, creamy Swiss cheese, and a crunchy topping that will make any meal memorable.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz thinly sliced deli ham
  • 8 oz Swiss cheese, sliced
  • 1 cup plain or Italian-seasoned breadcrumbs
  • 2 tbsp Dijon mustard
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×13-inch baking dish with non-stick spray.
  2. Layer half of the cooked chicken breasts in the baking dish, followed by half of the ham slices and half of the Swiss cheese.
  3. Repeat the layering with the remaining chicken, ham, and cheese.
  4. In a bowl, whisk together Dijon mustard and chicken broth; pour evenly over the layers in the baking dish.
  5. In another bowl, mix breadcrumbs with olive oil until moistened; sprinkle over the top layer.
  6. Bake for 30-35 minutes until bubbly and golden brown.

Notes

  • You can substitute turkey for chicken if desired.
