- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cups fresh broccoli florets
- 1 cup uncooked long-grain rice
- 2 cups shredded sharp cheddar cheese
- 1 can (10.5 oz) cream of chicken soup
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- Olive oil or cooking spray for greasing
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with olive oil.
- In a skillet over medium heat, cook seasoned chicken breasts until golden brown (5-7 minutes per side). Remove from heat and chop into bite-sized pieces.
- In the same skillet, add broccoli florets and rice with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer until rice absorbs the water (15-18 minutes).
- In a large bowl, combine chopped chicken, the cooked rice mixture, cream of chicken soup, garlic powder, onion powder, and half of the cheddar cheese.
- Pour the mixture into the prepared baking dish. Top with remaining cheese and bake for 25-30 minutes until bubbly and golden.
Notes
- Substitute broccoli with spinach or mushrooms for variation.
- For added crunch, sprinkle breadcrumbs on top before baking.
- Store leftovers in an airtight container for up to three days; reheat in the oven at 350°F until warmed through.
