- 1 lb boneless chicken thighs
- 1 cup long-grain white rice
- 4 cloves fresh garlic, minced
- 2 cups low-sodium chicken broth
- 1 medium onion, diced
- 1 cup bell peppers (mixed colors), diced
- 1 tsp paprika
- 1 tsp dried thyme
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sautéing until fragrant and golden.
- Add the boneless chicken thighs and sear until golden brown on both sides (about 5 minutes each).
- Stir in the diced bell peppers, paprika, and thyme. Cook for an additional 2-3 minutes.
- Carefully add the long-grain white rice and chicken broth to the pot. Bring to a gentle simmer.
- Cover with a lid, reduce heat, and let cook undisturbed for about 20 minutes or until rice is fluffy and has absorbed all the liquid.
- Remove from heat and let sit covered for an additional 5 minutes before fluffing with a fork.
