Description

Chicken and Rice is a comforting one-pot dish that combines tender chicken thighs with fluffy rice, aromatic spices, and colorful vegetables. Perfect for weeknight dinners or family gatherings.


Ingredients

  • 1 lb boneless chicken thighs
  • 1 cup long-grain white rice
  • 4 cloves fresh garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 1 cup bell peppers (mixed colors), diced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sautéing until fragrant and golden.
  2. Add the boneless chicken thighs and sear until golden brown on both sides (about 5 minutes each).
  3. Stir in the diced bell peppers, paprika, and thyme. Cook for an additional 2-3 minutes.
  4. Carefully add the long-grain white rice and chicken broth to the pot. Bring to a gentle simmer.
  5. Cover with a lid, reduce heat, and let cook undisturbed for about 20 minutes or until rice is fluffy and has absorbed all the liquid.
  6. Remove from heat and let sit covered for an additional 5 minutes before fluffing with a fork.
