- 2 tsp taco seasoning
- 4 oz cream cheese
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
- Heat a tablespoon of oil in a large skillet over medium heat. Sauté the diced onions and bell peppers until softened, about 5 minutes.
- Add the ground chicken or turkey and minced garlic to the skillet. Cook until browned, approximately 7-10 minutes.
- Stir in taco seasoning, diced tomatoes (with juices), and chicken broth. Mix in cream cheese until melted and smooth.
- Fold in the cooked pasta until fully coated with the sauce.
- Top with shredded cheddar cheese, cover, and let it melt over low heat for a few minutes.
- Serve hot, garnished with fresh cilantro if desired.
