  • 2 tsp taco seasoning
  • 4 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
  2. Heat a tablespoon of oil in a large skillet over medium heat. Sauté the diced onions and bell peppers until softened, about 5 minutes.
  3. Add the ground chicken or turkey and minced garlic to the skillet. Cook until browned, approximately 7-10 minutes.
  4. Stir in taco seasoning, diced tomatoes (with juices), and chicken broth. Mix in cream cheese until melted and smooth.
