Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (about 34 pieces)
  • 1 ripe mango, diced
  • ½ cup red onion, finely diced
  • ¼ cup fresh cilantro (optional)
  • Juice of 2 limes
  • 1 jalapeño pepper, finely chopped (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Wash and dice the mango, onion, and jalapeño.
  2. In a bowl, mix mango, onion, cilantro (if using), jalapeño, lime juice, salt, and pepper well.
  3. Pat chicken dry; season both sides with salt and pepper.
  4. Preheat grill to medium-high heat. Grill chicken for 6-7 minutes on each side until fully cooked (internal temp of 165°F).
  5. Top grilled chicken with mango salsa while warm and serve immediately.

Notes

  • Feel free to adjust the spice level by varying the amount of jalapeño.
