- 1.5 lbs boneless, skinless chicken breasts (about 3–4 pieces)
- 1 ripe mango, diced
- ½ cup red onion, finely diced
- ¼ cup fresh cilantro (optional)
- Juice of 2 limes
- 1 jalapeño pepper, finely chopped (adjust to taste)
- Salt and pepper to taste
Instructions
- Wash and dice the mango, onion, and jalapeño.
- In a bowl, mix mango, onion, cilantro (if using), jalapeño, lime juice, salt, and pepper well.
- Pat chicken dry; season both sides with salt and pepper.
- Preheat grill to medium-high heat. Grill chicken for 6-7 minutes on each side until fully cooked (internal temp of 165°F).
- Top grilled chicken with mango salsa while warm and serve immediately.
Notes
- Feel free to adjust the spice level by varying the amount of jalapeño.
- This recipe can also be baked at 375°F for about 25-30 minutes if grilling isn’t an option.
