Description
Experience the comforting flavors of carne con papas, a savory beef stew with tender potatoes that brings warmth to any family gathering.
Ingredients
Scale
- 2 lbs beef chuck roast
- 4 medium Yukon Gold potatoes, cubed
- 1 large sweet onion, finely chopped
- 4 cloves garlic, minced
- 3 large carrots, sliced thick
- 4 cups low-sodium beef broth
- 2 bay leaves
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat. Season the beef with salt and pepper, then brown it on all sides.
- Remove the beef and add onions and garlic to the pot. Sauté for 3-4 minutes until fragrant.
- Add carrots and potatoes, stirring to combine.
- Pour in the beef broth until ingredients are submerged. Add bay leaves and return the beef to the pot. Bring to a simmer.
- Cover and reduce heat to low, cooking for 2-3 hours until the beef is fork-tender.
- Serve hot with crusty bread or rice.
Notes
- For added depth of flavor, use fresh herbs like thyme or rosemary.
- Swap out Yukon Gold potatoes for sweet potatoes for a different taste profile.
- Let leftovers sit overnight in the fridge; they often taste even better the next day.
