Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced onions and sauté until soft and golden brown, about 15-20 minutes.
- Stir in minced garlic and cook for another 1-2 minutes until fragrant.
- Meanwhile, cook fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
- Pour vegetable broth into the skillet with onions and garlic; let it simmer for about 5 minutes.
- Stir in the cream or vegan alternative until well combined.
- Toss the drained pasta into the skillet, mixing thoroughly to coat with sauce. If needed, add reserved pasta water gradually to achieve desired consistency.
- Season with salt and pepper. Garnish with fresh herbs and optional Parmesan cheese before serving.
