Ingredients

  • 2 large sweet onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 cup low-sodium vegetable broth
  • 1/2 cup heavy cream or vegan cream alternative
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil or parsley for garnish (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced onions and sauté until soft and golden brown, about 15-20 minutes.
  2. Stir in minced garlic and cook for another 1-2 minutes until fragrant.
  3. Meanwhile, cook fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  4. Pour vegetable broth into the skillet with onions and garlic; let it simmer for about 5 minutes.
  5. Stir in the cream or vegan alternative until well combined.
  6. Toss the drained pasta into the skillet, mixing thoroughly to coat with sauce. If needed, add reserved pasta water gradually to achieve desired consistency.
  7. Season with salt and pepper. Garnish with fresh herbs and optional Parmesan cheese before serving.

  • For added flavor, incorporate sautéed spinach or mushrooms into the dish.
  •  To make it dairy-free, simply omit cheese or use nutritional yeast as a substitute.
