Ingredients

  • 4 crispy corn tortillas
  • 1 can (15 oz) low-sodium refried beans
  • 1 cup shredded Monterey Jack and cheddar cheese blend
  • 1 ripe avocado, sliced
  • ½ cup plain Greek yogurt or sour cream
  • 1 cup fresh salsa or pico de gallo
  • Fresh cilantro, chopped (optional)
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, toast each tortilla until golden brown and crispy on both sides.
  3. Gently heat the refried beans in a saucepan over low heat, stirring occasionally until warmed through.
  4. Spread a generous layer of warmed beans on each tortilla and top with shredded cheese.
  5. Bake in the preheated oven for 5-7 minutes until the cheese is melted.
