- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz full-fat cream cheese, softened
- 1 cup sour cream
- ¾ cup powdered sugar
- 2 tbsp lemon juice
- 2 tsp vanilla extract
- 2 cups fresh berries (strawberries, blueberries, or raspberries)
Instructions
- 1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl. Press the mixture into the bottom of a greased springform pan.
- 2. Bake the crust for about 10 minutes until lightly golden. Let it cool completely.
- 3. In another bowl, beat softened cream cheese until smooth. Add sour cream, powdered sugar, lemon juice, and vanilla extract; mix until creamy and well combined.
- 4. Gently fold in half of the fresh berries into the filling mixture.
- 5. Pour the filling over the cooled crust and top with remaining berries. Cover and refrigerate for at least four hours or overnight until set.
- 6. Once set, remove from the springform pan, slice into wedges, and serve.
