Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth but slightly chunky.
  3. In another bowl, whisk together eggs, granulated sugar, and brown sugar until combined. Stir in the oil (or melted butter) and mashed bananas.
  4. In a separate bowl, combine flour, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture until just combined—avoid overmixing.
