- 8 oz penne pasta
- 1 block (8 oz) high-quality feta cheese
- 2 cups ripe cherry tomatoes, halved
- 3 tbsp extra virgin olive oil
- 2 garlic cloves, minced
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large baking dish, combine cooked pasta, halved cherry tomatoes, minced garlic, olive oil, salt, and pepper. Mix well.
- Place the block of feta cheese in the center of the mixture and drizzle additional olive oil on top.
- Bake in the preheated oven for 25-30 minutes until the feta is golden brown and bubbly.
- Remove from the oven, sprinkle fresh basil over the dish, and stir gently before serving.
Notes
- Use room temperature feta for better melting.
- Experiment with different vegetables like spinach or sun-dried tomatoes for added flavor.
