Baked feta pasta with cherry tomatoes is a creamy, flavorful dish that combines roasted feta and sweet tomatoes for a quick and satisfying meal.


Ingredients

  • 8 oz penne pasta
  • 1 block (8 oz) high-quality feta cheese
  • 2 cups ripe cherry tomatoes, halved
  • 3 tbsp extra virgin olive oil
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  3. In a large baking dish, combine cooked pasta, halved cherry tomatoes, minced garlic, olive oil, salt, and pepper. Mix well.
  4. Place the block of feta cheese in the center of the mixture and drizzle additional olive oil on top.
  5. Bake in the preheated oven for 25-30 minutes until the feta is golden brown and bubbly.
  6. Remove from the oven, sprinkle fresh basil over the dish, and stir gently before serving.
